Alright, I'm just gonna start off by saying that I really enjoy the core gameplay in SFV.

Initially it was just a game to wind up after being tired (of playing other games), but recently I've tried notching up the difficulty and it feels very competitive and fun.

While the general consensus is that the netcode is better and serviceable now in 2021 than it was at launch (2016), the netcode is no where near the effectiveness of Skullgirls, Melee or Mortal Kombat 11 which remains as the gold standard of online playability in a fighting game.
