You straight up CANNOT change the graphics.
If you want a great online 1v1 fighter with a really good netcode and a smooth matchmaking experience, that lets you play as many games with the same opponent as you want, then despite the current state it is still a great deal, as the gameplay and the matchmaking mode are amazing.
