I recommend playing on a controller, it makes it a lot easier to deal with.
Just noticed a patch note that seems to have addressed the save file corruption during coop gameplay.
With each day, you get a maintenance period before the story opens, which is not timed, and you can use that time to clean, repair, and stock (you can still work on this stuff while the shop is open, but the open period is timed and you will have to spend some time cashiering).
